Pensacola has some of the best red snapper fishing in the Gulf, and most of it comes down to one thing: finding the right structure. Natural bottom, artificial reefs, old rigs. Snapper stack on all of it. The key is knowing how to work the depth once you're on them.

Drop your bait down and let the weight hit the bottom. Once it does, crank up exactly five full turns. That puts you right in the strike zone where snapper are actively feeding. If you're not getting bites within a few minutes, crank up five more, ten total from bottom. Snapper suspend at different levels depending on current and baitfish, so working through those depths finds them fast.

Use circle hooks with cut bonito if available. It stays on the hook well and snapper can't resist it. Other cut bait should work well too. I've just had nice trips with cut bonito. A 4 to 6 ounce egg sinker keeps you vertical in the current. Tie 40 to 60lb fluorocarbon leader between your mainline and hook. Snapper have good eyes and clear leader gets more bites in the blue water off Pensacola.

The artificial reefs off Pensacola are well-documented. The Navy sank several vessels specifically to create reef structure, and those spots hold fish year-round. Check the Florida Fish and Wildlife reef coordinates before you go. They're public and accurate. Water depth runs 60 to 150 feet on most of the productive spots.

For inshore structure fishing in the same area, Pensacola Bay holds sheepshead, redfish, and snapper on the bridge pilings and jetties. Closer to the marina and accessible in smaller boats.

Federal snapper season is short, so fish it when it's open and know your limit. Two per person, minimum 16 inches. A cooler full of snapper fillets from Pensacola is worth the trip.
